I felt a sensation in my stomach when I ate the mac and cheese I ordered.
I started to experience that feeling in my stomach again after I ordered chicken fingers with ranch for dipping. I had to pull over several times on the way home because I went straight to my car.
That is when I made the connection. I was not able to drink Lactose. This was confirmed by my doctor. I was very sad. How could that happen? And so suddenly?
I was able to eat dairy with a pill for a while. As the pill began to lose its effect on me, that comfort began to diminish.
I knew I had to make a change.
Being vegan became easy.
I had to give up dairy and relearn how to live without it.
It was not easy at first. I have had some really bad vegan food. I grabbed a banana while rushing out of the house thinking it was vegan, but was only able to do that many times before thinking If I see one more doggone banana. I wondered what to do with the rows and rows of tofu at the supermarket. I’ve had friends pass up on coming over for dinner after they were told the food would be vegan.
Slowly, I began to experiment. I was playing with different snacks and trying new recipes.
I wanted it to be easy. It was fun.
And it worked!
I learned what to do when I wanted meat. How to deal with family who question your decision. I learned to make a lifestyle shift where I no longer miss meat. It is easy for me to be vegan.

It took me a long time to feel the benefits of going vegan.
- I felt physically better
- My skin cleared up
- TMI: going to bathroom was more productive
- My mood was better
- I overall felt stronger and in better health
- I slept better
I was able to make the shift and even enjoy eating vegan, as well as figuring out some tricks that made my meat loving friends want to come to my dinner parties.
